My mum surprised me today with flowers and a short visit .
I gave her a hug and a quick , delicious one pot lunch . . . that’s how life should be!

Curry Paste :
3 tsp Koriander powder
1 tsp turmeric powder
1 tsp jeera powder
1/2 tsp dark mustard seeds powder
1 tblsp white poppy seeds, ground
1 tblsp dried mint leafs
1 green chili , optional
Salt to taste
3 tblsp water
mash and corporate it in a stone grinder or for maximum laziness – blitz it in a blender and set aside.
1 Onion, small, chopped
1 Carrot, fine chopped
2 small potatoes, fine chopped
1 cup cauliflower, chopped
1 cup mushrooms, chopped
1 cup pasta, small size like copetti
1 cup water
1 cup tomato sauce
1 glove of garlic
Pour all the veggies and the pasta wit water and tomato sauce in a sauce pan, bring it to a boil.
Now incorporate the curry paste, close the lid and reduce the heat.
Give the pot a stir from time to time and let it cook on low heat until the paste is al dente and the veggies soft.
I served it with dal and homemade soy yoghurt.
