🍉 years ago friends of mine came’ up with a delicious recipe of a water melon and feta cheese salad . . .
which was the bomb obviously ;-))))
but during the years I stoped eating dairy products and don’t eat those stuff anymore WELL!!! I never tried it on a vegan base and was on fire!!! if I start thinking about it , last time I met them. . . I had to modify the recipe anyways – cause it doesn’t call only for feta , I also had to substitute the olive oil , wich I avoid as much as I can , cause my digestion struggles’ with oily meals and it makes me chubby anyways hahaha and I ad some carbs and dried herbs . . . tadaaaaa !!! HERE it is – the most delicious vegan salad I’ve ever had . . .
For 1 bowl
1/2 of a baby water melon , cut in triangles
150 g firm Tofu , crumbled
2 potatoes, cooked and chopped
8 kalamata olives
1 stalk spring onion, chopped
2 stalks parsley , chopped
1 tsp dried mediterranean herbs
Place all this goodness in a pretty bowl and arrange it well and as a eye candy.
2 Tbls tamari
3 Tbls lemon juice
1 glove garlic , minced
1 tsp almond mousse or almond butter
Mix it well in your fancy shaker and toss it on uour salad – for finish sprinkle’ some spring onions and maybe some more nice and shiny olives – yum!!!!
