For me salad season is around the year !

I don’t like lunch without a big , crunchy and sour salad bowl – it’s my daily refreshment – even in wintertime !

But there are differences – of course! in winter I like salads with nuts , grapes and vegan ricotta or baked veggies . . . in Summer I prefer fresh and super sour salads with a lot of raw stuff , sometimes grilled stuff or baked tofu , if it’s a main dish salad .

My favorite dressing for those summer freshys’ is creamy citrus dressing . . . and I’m sure! it will be your favorite too ;-))

1 medium Jar

Juice and zest of 1 lemon

Juice of 1 lime

1 tsp vegan pesto (homemade 😉

1 tsp white miso paste

4 Tbsp hemp hearts 

or if you prefer a super lean’ dressing . . .  instead of hemp hearts , use

3 Tbsp soft tofu  . . . but less water!!!

1 tsp tamari

dash of fresh pepper


Combine all the ingredients in a blender jar – fill it up with 4-6 Tblsp water and blend it until smooth and creamy – if you like it on a thinner  consistency , pour in more water or lemon juice !!! Refridgerate and use it on the next 4 to 5 days :-))
