This is a super quick and body warming soup , you can eat every time on every mood in lots of different versions – take your soup pot . . . are you ready? Let’s soup’

Make a large or 2 small servings

1 sheet small rice noodles

500 ml hot water (teacooker’ ect)

Toss the noodles with hot water , put a lid on and set aside.

800 ml Soup stock ( I have that most the time on hand – recipe in the chronic ) or 1 Tblsp salt free or less in salt soup powder with 800 ml hot water.

125 g tofu , cubed

8 cherry tomatoes , in half

6 shiitake or other mushrooms , in slices 

3 spring onion stalks , sliced

1 stalk celery 

Juice of 1/2 lemon

1/2 Tblsp less in salt miso paste

Sesame seeds

Optional :

(1 tsp braggs aminos)

Pot on the stove ,pour the  celery stalk , 1/2 of the spring onions , miso paste and the stock – in and bring it to a boil.

If it’s starts to smell of celery pour them out , cut the stalk in pieces and put it together with all the other ingredients back in the pot , close the lid and let the soup simmer for couple of minutes .

Meanwhile rinse the noodles in a sieve with warm water , let them drain and place them in (one or two) a bowl.

Pour the soup over , sprinkle some lemon juice in , top it with the rest of the fresh spring onions and sesame seeds . . . and enjoy it 🙂
