Oh well , that’s a typical fact : if you are out for work , busy during the day . . . than you are ready for junk food . . . and feel bad after that 😦

So I learn to have stuff in my cabinet to cook super quick meals from stocks.

Rice Cake is one of those super handy quickies πŸ˜‰ you can buy them in Asia supermarkets ( better Korean supermarkets ) and they last very , very long – even the fridgerate ones . 

If you have no Asian market around you , you can use rice pasta instead of it .

For MEGA quick meal prep I use my instant pot – Oh lord! YOU should have one of those !!!! It’s the ultimate kitchen helper – for every reason !!!! 

If you haven’t one – use a normal pressure pot . . . in a normal pot you have to cook the rice cake separate , otherwise they will stick on the ground – you never wanna’ clean up a burnt’ rice cake pot ! Believe me ;-D

2 meals 

1 cup rice cakes 

5 cups rinsed spinach

1 cup almond milk 

1 cup water

2-3 gloves of garlic , minced

2 tblsp nutrition yeast

Dash of salt and pepper 

Pour the liquids in the instant pot and previously separate the rice cakes and then put it in .

Then pour in the yeast , garlic , salt and pepper , fill it up with the spinach leaves .

Close the lid , turn the iPod on and press [soup] with 12 minutes.

Let it cool by itself until the valve is unlocked.

Ready to eat :-))
