SUSHI RICE BOWL

A delicious rice dish – pleasant and full of good nutrients – and great tastes that I could bathe in it – unless there somewhere would be a whole sea of ;-D
One can increase the nutrient if you use brown rice instead of white – I ‘m sometimes in the mood for husked rice, because it can absorb the flavors better by its neutral taste.
For 1 large Bowl
2 cups sushi rice, cooked
( Express should be easy to take from the restaurant on the way)
2 large potatoes, cooked and diced (preferably the day before!)
1 red onion, chopped
1 avocado, ranging
1 small cucumber, diced
2 tomatoes, diced
1 sheet of nori, finely crumbled
parsley and shredded coriander
DRESSING :
4 Tbls silk tofu
3 tsp Dijon mustard
juice of 1 large lemon
2 tsp dandelion honey or apple sauce
pinch of pepper
1/2 tsp Kala Namak (black salt)
(olive oil, if desired šŸ™‚
The rice does not have to cool !!! , , It tastes really great when processed hot šŸ™‚
Combine all ingredients in a bowl and marinate with the dressing – garnish with the shredded herbs and take few minutes for infuse and than : enjoy !!!! Yamm!
